    Pizza, Pizza, Pizza...

    Are you like me? Do you love a good slice of pizza any time, any where? What to do when you have to refrain from gluten or worse yet if you have an out and out gluten allergy and can't get near a good pizza?

    You start the search - you look for gluten free crust recipes, you look for pre-made crusts, you do whatever you must to figure out this conundrum.

    Well after a two seek search, I found pre-made crust in my health food freezer section of the local market. Honestly, I was hesitant, really quite concerned. Giving up pizza would be a major bummer for this girl.

    Well, this is what it looked like after I added sauce, meat, mushrooms and cheese (my favorite choices if it's going to be just myself sitting down to eat.)

    And I am joyously happy to report that it tasted just like every other homemade pizza that I've ever made. YUM!!! I couldn't be happier. I have also found that several of our local pizza parlors have a gluten free crust option now. Yeah!!!

    Lesson: Just because you have to give up one food item, doesn't mean you can't find a good substitute - there are numerous options out there now, much more than there were even two short years ago when a friend of mine was diagnosed with a full blown gluten allergy. And the best part, is  that most of these options are organic and/or made with little to no chemicals and preservatives. Yeah!! Even the Mad Scientist has said that he is more than willing to eat some of these items over there gluten rich counterparts just because they are good and better for our overall health. What a guy - sorry girls, but he's been off the market for a long time, but I'm thinking there has to be some more like him out there somewhere. Just sayin' - I love that man!!!

    So, I'm ready for the next pizza party, I'll even bring my own if needs be, but I'll be there and ready to have a good ole' time.

    Eat to live and maybe on occasion vice versa...
